-This recipe serves 1 dozen enchiladas
12 corn tortillas
8 Guajillo chiles
2 1/4 cups chicken broth
2 cups shredded chicken
1/4 onion
2 to 3 garlic cloves
1/2 tsp Mexican Oregano
1 tsp salt (Himalayan) or 1/2 Tbsp chicken bouillon
10 Oz. Queso Fresco
1 tbsp lard or oil (for enchilada sauce)
Oil for frying
Optional- Crema fresca Mexicana

Instant pot chicken
Pressure cook 1 hr
1 small chicken
1 whole garlic
1/2 Tbsp Himalayan salt (adjust to your salt)
