About the owners
Owners Andres Botero and Andrea Guzman opened The Gelato Lab after relocating to the U.S. from Australia. Botero said the goal of the business is to “spread happiness” in the community, and be a place where families can hang out with their children.
The shop is staffed by a mix of Botero and Guzman’s family, including his sister-in-law, he said, as well as local high school students from the area.
About the business
The Gelato Lab is a locally owned shop serving a variety of sweet treats in central Round Rock. It first opened in June 2025.
The shop has games and activities, as well as a children’s seating area and a wall of colored artwork from past customers, creating a welcoming place for families to spend time in.
Botero said the business is committed to crafting its gelato with simple ingredients in-house, using milk, cream and fruit instead of processed bases.
What they offer
Specialty flavors and fresh ingredients are the main drivers of the shop’s menu, Botero said. Fresh mangoes flavor the shop’s best-selling Maracumango gelato, and specialty chocolate directly from the Amazon rainforest is the vital ingredient to its Rainforest Chocolate flavor. Gelato is made each day, Botero said, and the menu includes more than 24 flavors.
In addition to gelato served by the scoop in cups and cones, the shop’s menu includes cheesecakes, gelato cakes, tiramisu, Dubai chocolate strawberries, waffles, milkshakes and banana splits.

Since opening the shop, Botero said the Round Rock community has been a friendly place to operate.
“The community is amazing,” he said. “They’re very supportive and really appreciate local small businesses.”
