LAS VEGAS (FOX5) — Fausto’s Mexican Grill has become a staple in the Las Vegas valley, with five locations in Southern Nevada, and the next generation is already stepping in to carry it forward.

From the fields to the kitchen

Before Fausto Vega was a restaurant owner in Southern Nevada, he was picking strawberries in California.

“We’ve had luck, not like all immigrants, but we’ve been working hard, always working hard,” Vega said.

Vega immigrated from Mexico in 1977, working his way from the fields to restaurant kitchens.

“We all have a chance in this great nation — a chance for every immigrant. For those of us who know how to make the most of it, it’s the American Dream we all share, and we can all achieve it,” Vega said.

Building the business

More than two decades after arriving in the U.S., Vega and his family opened their first Mexican restaurant in 2001. Today, Fausto’s has grown to five locations across the Las Vegas valley.

“My dad would be at work every single day, to this day. Five in the morning until 11, 12, midnight. So, for me, it was just seeing all my parents just at work,” said Efren Vega.

Behind that expansion is a family that built its business with limited formal education and a language barrier.

“Both my parents having a third and fourth grade education. For me, it’s a lot. It’s a great achievement. It’s a great honor to say that both my mother and father are the owners of Cosmos,” Efren Vega said.

The next generation

The next chapter is already taking shape, as the next generation of the Vega family starts taking the reins.

“We like to help schools, primarily. So we go up, we set up a little booth. And in any way, shape, and form that we can help. For example, if it’s food, or just food supplies, you know, we’re there to help the community. That’s something that we’ve done for the past year,” Efren Vega said.

The Vega family says they are not done growing. They hope to open even more locations across the valley.
