Bojangles, a popular fast-food restaurant specializing in Cajun-style fried chicken, opened its first restaurant in Colorado on Tuesday.
The restaurant is located at 1275 Drew Dix Parkway inside TravelCenters of America on the far north side of Pueblo.
The North Carolina-based fast-food restaurant has more than 800 locations nationwide. The Pueblo location is also one of the company’s western-most restaurants, with Las Vegas being the furthest west.
Currently, there are no plans for a location in Colorado Springs, according to city records.
“We couldn’t be more thrilled to bring Bojangles to the Pueblo community and introduce our bold Southern flavors to both local community members, visitors and travelers,” said owner and operator Lissette Amiel. “We’re proud to serve our delicious chicken, biscuits and tea in this convenient location, and we look forward to creating new jobs and becoming a valued part of the area.”
In total, 30 locations will come open in the West, with a majority in the greater Las Vegas area and 10 within TravelCenters of America centers.
The new restaurants will not be standalone buildings, but rather a quick, on-the-go with a dine-in option and a limited menu compared to the traditional restaurants. One offer will be “quick, quality breakfast,” chicken items and biscuits, a news release said.
