Dallas-based sushi chain coming to San Antonio’s Pearl

Dallas-based sushi concept Nori Hand Roll Bar & Sushi will make its debut at Pearl next spring, according to officials with the downtown dining and retail development.

State regulatory documents show the restaurant is going into 1118 E. Elmira St., Building 1, in the Cooper’s Row development, across the river from the Pullman Market. It’s expected to begin construction work on the nearly 3,000-square-foot-space this September and complete work in April 2027, according to a filing with the Texas Department of Licensing and Regulation.

Founded by chef-owner Deukbok Cha, Nori Hand Roll Bar & Sushi — not to be confused with Austin’s Nori, a plant-based sushi restaurant — features a temaki set menu. What does that mean? Essentially, that means the restaurant offers an array of hand-rolled sushi options, sometimes with an assortment of sides. For example, Nori Hand Roll Bar & Sushi has a Hangry temaki menu, in which the customer gets six hand rolls for $49. 

The menu for the restaurant’s Dallas location also includes an assortment of izakaya-style dishes, nigiri, sashimi, chef specials and a la carte bites. While it’s unknown at press time what San Antonio’s drink menu will feature, the Dallas spot has an assortment of gin, shochu, whiskey, tequila and vodka-based cocktails, in addition to a selection of wine and sake. 

In a statement, Cha praised Pearl’s “incredible food culture.”

“We want to create a gathering place where people can stop in for fresh handrolls and Japanese-Korean flavors that are simple, approachable and genuinely delicious,” he said. “We’re excited to become part of the neighborhood and share what we do with San Antonio.”
