The Dallas Morning News is on a quest, helmed by food reporter Imelda Garcia, to find authentic Mexican cuisine in North Texas.

The new series is called D-FW Sabores (“sabores” means flavors in Spanish). The approach is simple: we’ll highlight traditional dishes from some of Mexico’s most iconic regions and the people making them locally.

Online, you can find a new story focused on a fresh dish every week that’s celebrated in its region of origin, along with local restaurants in Dallas-Fort Worth where you can dine on these nostalgic foods.

Find videos that pair with each dish, stories on the people making them, expanded photo galleries and more at dallasnews.com/dfw-sabores.

The latest food and drink reviews, recipes and info on the D-FW food scene.

The series kicked off with a look at Monterrey and an exploration of where you can eat cabrito, trompo tacos and chicharrón at restaurants and other area businesses.

¡Buen provecho!

This story is part of D-FW Sabores, a series dedicated to finding authentic Mexican cuisine across North Texas, dish by dish, region by region.
