A beloved San Antonio pizza chef has returned to the city through a partnership with Gimme Gimme bar.
John Winkler — the pizzaiolo behind Truth Pizzeria — joined the kitchen at Southtown’s Gimme Gimme on Friday, the bar’s owner Aaron Peña wrote in a Tuesday Instagram post.
Winkler specializes in Neopolitan-style pizzas, known for their soft, puffy crust. The menu on the Gimme Gimme Facebook page features classics like cheese and pepperoni as well as specialty pies — including a caramelized onion and pear pizza.
In his Instagram post, Peña described Winkler as an “old bud,” explaining that they first met 13 years ago working at the now-shuttered Alamo Street Eat Bar.
Winkler has a history in San Antonio’s food scene. Truth, his first brick-and-morter restaurant, opened on the East Side in 2020 and closed in 2022. Before that, he ran Sulla Strada, a pizza food truck at Squeezebox, a now-closed bar on St. Mary’s Strip that was also owned by Peña.
