BANGOR, Maine (WABI) – A new business is opening in Brewer next week, bringing a taste of Texas and Mexico to Maine.
Happy Javy’s is a takeout bakery and food business started by Javier Rios.
He says his dream has quickly turned into reality, thanks to community support.
“This is kind of a spontaneous thing.” Rios said. “I had zero plans on doing anything like this when I first moved here.”
When his family moved from San Antonio, Texas to Bangor, Rios wasn’t expecting to start a business. But one recipe from his childhood sparked an idea.
“A lot of it was just going out, experiencing foods in Texas,” Rios said. My mother, of course, taught me how to make the polvorones.”
From work to the Bangor European Market, demand grew fast.
“Just making the cookies for fun and giving them to my friends. That was the first reaction,” Rios said. “And then after that, it kind of just snowballed into this.”
Now, he offers all sorts of cookies and breakfast tacos.
“I try not to zest it up too much,” Rios said. “I want to get it to where you’re comfortable eating and they can add the salsa themselves.”
Happy Javy’s will open for takeout on Tuesday, September 9th.
