Fresh Monkee Set To Bring Smoothie Concept To Spring

Fresh Monkee, a smoothie and nutrition brand known for its made-to-order blends, is on its way to Spring. The upcoming shop will open at 25118 Grogans Mill Rd, Ste C, marking the first Fresh Monkee location for local franchisee Mitch Provost.

Provost, a retired engineer from the Houston area, is no stranger to business ownership. “I’m a retired engineer from the Houston area, and wanted to be able to start up a business among my other businesses. I’m also involved in real estate and transitioning to do something more hands-on and that has more control,” he said. While he has multiple ventures under his belt, this will be his first time stepping into franchising.

What drew him to Fresh Monkee was the franchise model itself. He was looking for a younger, smaller brand with proven success and strong growth potential. He is currently in the final design stage for the new store, with construction set to begin now that the lease is signed. The build-out will transform 1,311 square feet of space into a fully operational smoothie shop.

Provost says this first location will be a test for future growth, but he is optimistic about the potential to expand into a multi-unit portfolio. Fresh Monkee is expected to open its doors in Spring toward the end of October or sometime in November 2025.
