GAIA has made its long-awaited U.S. debut in Miami Beach.

Drake has eaten there. So have the Beckhams, Naomi Campbell, Idris Elba and Formula 1’s Charles Leclerc. GAIA has spent eight years becoming one of the world’s most coveted dining destinations. The Greek-Mediterranean restaurant has quietly conquered Dubai, Monaco, London, Doha and Marbella since its 2018 founding. This year, it made its long-awaited U.S. debut in Miami Beach.

“GAIA was never about a literal interpretation of Greece,” Chef Izu Ani, head chef at GAIA, said in an email interview. “It was never about blue and white, or taking a ‘theme’ from it. We go back to the roots: Greek hospitality, the Mediterranean way of living. I have spent a lot of time in Greece, and what stays with you is not what you see, but how you feel.”

In eight years, Fundamental Hospitality, the group behind GAIA, chaired by Evgeny Kuzin, has opened just six locations worldwide. According to Ani, Miami was always in the long-term plan.”Miami was always part of the journey, from the very beginning of GAIA,” he says. “It is a city that lives outside, that understands light, the sea, and the rhythm of gathering. For me, GAIA belongs in places where people already have this connection to life.”

When your regulars include celebrities around the world, the pressure to scale fast must be considerable. Ani and Kuzin have resisted it anyway.”We are not only scaling a restaurant,” Ani says. “We are growing a philosophy, and that requires patience, discipline and respect. Every GAIA must feel real. It must have a soul. You cannot rush something that is built on emotion, on people, on the energy of a table.”

The food at GAIA Miami will be recognizable to anyone who has eaten at one of its existing outposts, but Ani is clear that he follows the city rather than imposing on it. Miami’s heat and coastal produce will shape what lands on the table.The anchor is GAIA’s signature Ice Market, a daily display of pristine fish and seafood on ice from which guests select their own meal. It’s a ritual that has defined the brand across every location.

Beyond that, expect the Sea Bream Carpaccio with lemon, mandarin and truffle dressing, a dish that bears the fingerprints of Ani’s deep respect for Japanese technique. You’ll find it alongside baked barrel-aged feta in honey, nuts and filo pastry; wood oven prawns with harissa, rosemary and chili; and a whole fish prepared to order with techniques ranging from a salt crust with sage and orange zest to a harissa preparation with garlic and lemon.

For the table, a classic moussaka layered with aubergine, minced beef and béchamel. For those wanting to go bigger, slow-cooked baby goat, charcoal-grilled wagyu rib eye and lobster linguini in cherry tomato sauce.

“The soul of the menu does not change,” Ani says. “GAIA was never about the dishes or the recipes. It is about the mindset of how we understand the ingredients, how we respect them. In Miami, the lifestyle and the weather naturally call for something lighter, fresher. We never force change. We follow what feels right.”

The Space

A Cycladic-inspired design of whitewashed walls, natural limestone textures and abundant greenery has been the visual stamp of every GAIA. Miami will be no different, reinterpreted through the city’s breezy coastal light.

For Miami’s dining scene, already home to some of the country’s most ambitious new openings, GAIA’s arrival feels less like an import and more like an inevitability.
